Microwaving garlic and crushed red pepper in olive oil quickly infuses the
oil with flavor.
Red-pepper pasta: Cook 8 ounces dry spaghetti according to package directions,
omitting salt and fat. While pasta cooks, combine 1 1/2 tablespoons olive oil,
2 teaspoons bottled minced garlic, and 1/4 teaspoon crushed red pepper in a
microwave-safe bowl; cover and microwave at high 1 minute. Toss drained cooked
pasta with olive oil mixture and 1/2 cup vegetable broth. Sprinkle with 3 tablespoons
grated Parmesan cheese.
