Game Plan:
1. While the water for the noodles comes to a boil, cut the fruit for the side
salad.
2. While noodles stand:
• Finish fruit salad
• Cut beef and vegetables for Asian salad
• Measure sauce ingredients for Asian salad
3. While beef mixture heats in microwave, tear spinach and chop cilantro.
Quick Tips:
Bottled fresh ground ginger is a speedy way to invigorate this salad; look
for it in the produce sections of larger supermarkets. You may also substitute
an equal amount of grated fresh ginger.
Fresh fruit salad: Combine 1 mango, cut into 1/2-inch cubes; 1 Granny Smith
apple, cut into 1/2-inch cubes; 1 sliced banana; and 1 cup seedless grapes.
Combine 2 tablespoons lime juice, 2 tablespoons honey, and 2 teaspoons chopped
fresh mint; drizzle over fruit. Cover and chill.
