Total time: 34 minutes (marinating excluded)

Chipotle salsa -- both a key ingredient in the marinade and a condiment for the meat and vegetables -- has a smokier, more full-bodied flavor than regular tomato salsa. Marinating the vegetables in a zip-top plastic bag eliminates cleanup -- you just throw the bag away.

Game Plan

1. Marinate flank steak

2. Prepare grill or broiler

3. While grill is heating:

• Slice papaya and lime wedges

• Combine bean ingredients in a microwave-safe bowl.

4. While meat and vegetables are grilling:

• Cook refried beans

• Warm tortillas just before serving

Quick Tips

Because the steak has to marinate from four hours to overnight in order to tenderize and absorb flavor, youll need to start this recipe ahead of time.

Chipotle refried beans: Combine 1 (16-ounce) can fat-free refried beans, 2 tablespoons chipotle salsa, and 2 tablespoons chopped fresh cilantro. Microwave at high 1 1/2 minutes or until thoroughly heated.
