  Talking Tofu  
The words soft, firm, or extra-firm on tofu labels have to do with the texture and density of the product. Softer tofu is best used where it's handled as little as possible—when it's added to a soup or a gently simmering stew. It's also the tofu to purée and add to ricotta cheese, hummus, mayonnaise, muffin batters, and the like. The firmer the tofu is, the more it can be handled—marinate it, sauté it, fry it. But do note that tofu in aseptic packages can be fairly delicate, regardless of whether it's called firm or extra-firm, while the water-packed tofu tends to be sturdier.
