I’m not a vegetarian, but that doesn’t stop me from checking in on the monthly vegetarian thread on Cooking Light's Bulletin Board. I do love vegetables, all of them. OK, well most of them—not a big fan of Brussels sprouts, but I have to draw the line somewhere, right? Jtoepfert100 loves the Curried Couscous with Broccoli and Feta. I don't blame her; it's one of my favorites, too! Feta is great because it adds little bursts of flavor to whatever recipe it goes into.

Anyone throwing a party soon? It's very easy with Cooking Light's vegetarian-friendly menus like Country French, Sicilian Menu, or their Fresh is Best offerings. The Greek-Style Stuffed Eggplant and Onion Bread Pudding are going on my list. We went to Carmine's in New York City's Theater District some years ago and got introduced to savory bread pudding for the first time. Now, I'm always looking for another recipe to try, and CL's recipe can't get much simpler.

With the school year starting and weeknights getting filled up with kids' sports activities, I'm forever keeping an eye out for fast meals that I can feel good about serving my family. Our four-year-old son, Nicholas, started soccer for the first time this year (loves it!), and with his weeknight practices, I can always use a few more fast-to-table recipes in my repertoire. Believe it or not, if given the choice, Nicholas will choose a Greek Salad over pizza. I've found if I add kalamata olives to CL's Greek-Salad Pitas he'll gobble them right up. He's a sucker for anything with cucumber, feta, and kalamata olives. I can't blame him—such a great flavor combination. My kinda kid.

Although you might not immediately think there's a thriving "vegetarian" community on Cooking Light, a quick scan of the topics on the Bulletin Board's first page might convince you otherwise. Right now, our members are chatting about roasting cauliflower, favorite squash recipes, and the Orange Quinoa Salad from July's issue. The monthly soup thread is another great place for vegetarian recipes and it's hoppin' already.
