Flavor description
Originally from Japan, shiitake mushrooms (shee-TAH-kay) have a chewy texture and a dark, meaty taste. The mushrooms are easily dried and rehydrate well by soaking in water.

How to use
The tops can be sautéed as a side dish, added to a stir-fry, or used for added flavor is sauces. Although the stems are too tough to eat, they can be used as flavoring in sauces and soup stocks.

How to find
Japan produces 80% of total annual shiitake production, but your local supermarket should carry them. You can also buy dried shiitake mushrooms online at www.gourmetfoodstore.com.
