Flavor description
Groats are any grain (oats, wheat, or buckwheat) in its most minimally processed version. Since only the hulls are removed from groats, they retain more nutrients and fiber.

How to use
Cooked or left whole and soaked (for a few hours or overnight), oat groats give any salad that calls for grains a chewy, hearty, healthful bite.

How to find
You’ll find groats in health-food stores and some supermarkets.
