Flavor description
Most often associated with Mediterranean and Middle Eastern cuisines, where they appear in salads, falafel, or soups, fava beans are rich in protein. The beans range in color from yellow to green to tan to nearly black, and have a nutty flavor.

How to use
In addition to a pod that must be shelled, fresh favas’ tough outer skin must be removed with a quick blanching.

How to find
Find fava beans (sometimes called broad beans) at most grocery stores and farmer's markets.

Substitutes
Lima beans or brown beans
