Flavor description
Crème fraîche (krehm FRESH) is sour cream’s French cousin. Tangy, but with a rich, nutty undertone, crème fraîche has a smoother, thicker texture than sour cream.

How to use
Crème fraîche lends polish to anything it’s applied to--whether spooned over fresh fruit or used to thicken sauces.

How to find
Look in gourmet food stores or make your own by mixing one tablespoon of buttermilk into a quart of whipping cream, then letting the mixture thicken overnight in a covered glass bowl at room temperature.

Substitutes
Sour cream or clabber cream
