Flavor description
The cloves called for in cake and muffin recipes, or alongside ham, are unopened flower buds of an evergreen tree with a spicy taste. Clove oil’s refreshing fragrance is also found in medicines, toothpaste, mouthwash, and cosmetics.

How to use
Cloves are often used in desserts and marinades.

How to find
When buying whole cloves, make sure the buds are intact, with stems attached. Stored in a cool, dry place whole cloves, which can be purchased in most supermarkets, last up to a year; ground cloves are good for six months.

Substitutes
Allspice
