Flavor description
An Italian cheese with a nutty, sharp flavor and a light-yellow interior with holes. Asiago is semifirm when young, but grows harder as it ages, making it better suited to grating. Asiago is also good for baked dishes such as gratins and pasta toppings, or for shaving over salads.
How to use
Store cheese in a refrigerator drawer--not in the door, where it is vulnerable to temperature swings. Wrap hard cheeses in waxed paper, then store them in a zip-top plastic bag to preserve quality.
How to find
Look for Asiago in the specialty cheese section of your supermarket. Or, buy online at www.igourmet.com or www.cheesesupply.com
Substitutes
Romano cheese may be substituted for Asiago.
