Turbinado is a type of raw sugar that comes from the residue left after sugarcane has been processed to remove the molasses (further refining of that residue creates granulated sugar).

How to find
Found with other sugar products in large supermarkets and gourmet-food stores. Will keep indefinitely in an airtight container.

Substitutes
If not available, substitute raw or granulated sugar. Buy online at www.ChefShop.com.
