Flavor description
A blend of buckwheat and wheat flours, water, and eggs, Japanese soba noodles are a popular addition to soups in pan-Asian noodle houses. Soba can also be stir-fried or substituted for fettuccine or linguine.

How to find
Look for soba noodles in a well-stocked supermarket; or buy in Asian markets or online at sites such as www.ethnicgrocer.com.

Substitutes
This is one of the few Asian noodles for which there is no suitable substitute.
