Flavor description
Small, oblong, cream-colored nuts gathered from pine trees. Also known as piñons and pinyon nuts—found in both soft- and hard-shell varieties—are known for their winter sustenance, storing the seeds in stone-lined pits.

How to use
Pine nuts turn rancid easily, so store in the freezer for up to nine months.

How to find
Found in the nut section of large supermarkets and in health-food stores. Buy online at www.melissas.com.
