Flavor description
The Northern Italian town of Gorgonzola first produced its famous blue cheese during Roman times. Made from whole cow's milk, its color ranges from white to light straw, and has tendril-like green mottling. Gorgonzola has a soft, moist consistency and a highly developed aroma that ranges from mild to pungent, bordering on stinky. It has a piquant flavor.

Look for Gorgonzola in most large supermarkets; or, buy online at www.zingermans.com or www.igourmet.com.

Substitutes
This semisoft blue cheese can be substituted with Roquefort, Stilton or Saga blue.
