Flavor description
The "cream" of the tropics, produced by blending freshly grated coconut with hot water.

How to use
To see just how much trouble extracting fresh coconut milk is, we tried it in our Test Kitchens. Although it's not hard, it is time consuming. We tasted the fresh milk side by side with diluted canned coconut milk and found the two almost identical in taste.

How to find
Look for coconut milk in your supermarket or specialty Asian market. Buy online at www.thaigrocer.com or www.ethnicgrocer.com. Taste of Thai makes a canned "lite" coconut milk that’s great to use in healthy Asian and Caribbean cooking.
