Flavor description
A cabbage that has long, pearly-white ribs with dark-green leaves which don't form a head. Also known as "pak choy" or "pak choi." Use in salads and stir-fried dishes.

How to use
Use in salads and stir-fried dishes. Look for firm ribs and crisp leaves. Store in a plastic bag in refrigerator for up to three days.

How to find
Look for bok choy in a well-stocked supermarket; or buy in Asian markets or online at sites such as www.Melissas.com. It is available year-round.
