Though fruit pies were prevalent in England from the 1500s, apple pie grew popular in the United States as the country became the world's number one apple producer. (China surpassed the Unites States in 1991.) The standard recipe consists of loads of apple slices—no problem there—sandwiched between two fat-laden pastry crusts. We were able to reduce the amount of vegetable shortening in the piecrust by about half and maintain a tender, flaky crust that's every bit as delectable as the original. The lightened version has 80 fewer calories per serving and half the fat of its predecessor.
