As an aerobics instructor and restaurant manager in Bayville, New York, Anka
Pasare claims three passions: cooking, nutrition, and her husband, Eddie. All
three unite in the evening, after she returns home from a busy day at the Pine
Island Grill and faces preparing a healthy meal.
Pulling together a dinner for two isn't always easy. Anka often sees recipes
that interest her, but they usually make enough food for four or more servings.
And it's not as simple as just dividing the recipe, given that seasonings and
cooking times generally require further adjustments. "I play around with
recipes a lot," she says. "They usually end up just giving me an idea,
and then I try to figure out how to make it for the two of us."
Because Anka's dilemma is not uncommon, we've eliminated the guesswork with
recipes such as Mediterranean Tuna Cakes With Citrus Mayonnaise and Feta Chicken
and Vegetables.
Couples without children, single parents, newlyweds, and empty nesters--anyone
who cooks for two will find these dishes deliver great flavor and nutrition
in just the right measure.
