A traditional Mexican dish and a staple of Tex-Mex cuisine, enchiladas can be found sold on street corners and made in homes in nearly every Latin America country and most of the United States.

The word enchilada literally means "in chile." This refers to the classic green or red chile sauce used for the base of the recipe. The red sauce is usually comprised of red chile peppers and tomatoes, and the green sauce with green chile peppers and tomatillos.

Today, there are as many different versions of enchiladas as the number of cities who serve them. However, the concept is always the same: a softened tortilla (usually corn) rolled with a vegetable, meat, or cheese filling.
