Shrimp Toast Puffs with Two Sauces
"The combination of the shrimp puffs served with two sauces makes this a perfect party appetizer. Beat the egg and egg whites well so the puffs will rise when baked."

Light and Fresh Potato Salad
"My husband doesn't like mayonnaise, so I created a potato salad with a vinaigrette. I experimented and realized how little oil I need. Add the dressing while the potatoes are still hot. It really helps the vinegar permeate the potatoes."
Elsie Gonto, Savannah, Georgia

Seoul-ful Chicken with Minted Cucumbers
"My family loves Asian food, and I enjoy its vivid flavors and colors. This is my spin on Korean grilled chicken with a speedy kimchi-type accompaniment. I prefer using chicken thighs for this dish because they are juicier and tastier than boneless breasts. This dish is simple enough for an after-work dinner but scrumptious enough for guests."
Janice Elder, Charlotte, North Carolina

Old-Fashioned Oatmeal Honey Apple Cake
"I've been making oatmeal cake for my family for more than 45 years. Several years ago I revised the recipe, eliminating vegetable oil and using thick, chunky applesauce for added moistness. I replaced granulated sugar with honey, which gave the cake more flavor. The original frosting called for coconut, but I chose almonds, a more healthful option."
Barbara Estabrook, Rhinelander, Wisconsin
