We Clueless girls have been thinking about those of you getting ready to head
back to college. Being that we view everything as an opportunity to talk about
ourselves, this got us reminiscing about our own undergraduate years. Ah, good
ol' college. No student loans, no mortgage payments -- just fun with friends,
lots of parties, and (oh yeah) school. Well, college wasn't always a walk
in the park. One time, Ann spent all of her money on, um, adult beverages and
had to live off of popcorn and the kindness of friends for two weeks. Don't
let this happen to you!
For your benefit, we've pulled together some recipes that are great for every
situation. And don't worry. They won't cost you an arm and a leg, and you can
whip them up in your dorm's or apartment's kitchen -- no fancy equipment needed
here (no food processors or even blenders).
Here's your college care package from us:
Chiles Rellenos Casserole: You can either be selfish and make this
dish just for yourself (the leftovers are great and will last you a few days)
or invite some friends over for a casual supper. The refried beans and ground
turkey make it very filling (and cheap). Serve with a simple green salad and
chips and salsa.
Crispy Sesame Shrimp: Now, there just might be a time or two (or more)
when you need to impress a date. Whip up this easy entree, which serves
two, and plate it with sugar snap peas and rice. Your date will be amazed. You
might be, too.
Sausage-Pepper Pizza: Now, why would you make your own pizza when you
can just order one? Well, because ours tastes better, couldn't be simpler to
make, and puts you in control of the ingredients. Use it as a template and experiment
with different toppings. This recipe pairs sun-dried tomato chicken sausage
with roasted bell peppers. Next time, try pesto and chopped chicken with feta
cheese. Or steak and blue cheese. Get crazy! Live a little!
Spinach-Artichoke Dip: OK, this is great for when you have the munchies.
Say you're going to a party where some adult beverages will be served. Make
this dip before you head out, and heat it up when you get home. You'll thank
us. Really.
