Sushi Etiquette
Basic tips for serving and eating
Becky Luigart-Stayner

At most sushi bars, the waitress will offer a hot towel to wash your hands so you can pick up sushi with clean fingers. At home use hot washcloths.

Start with the salad and have miso soup with your sushi.

Pick up nigiri with chopsticks or fingers; dip topping into soy sauce. (If you dip the rice into the sauce, it will fall apart and taste mostly of soy.) Eat topping side down.

Pick up maki with chopsticks or fingers.

Eat a slice of pickled ginger after each variety of sushi to cleanse your palate.
