While you can find extralean ground beef (4 percent to 8 percent fat), we preferred using ground round, which is usually between 11 percent and 15 percent fat. For burgers, where the meat is truly in the spotlight, that bit of extra fat yields a more tender patty with a better texture. Even though we're not using the leanest beef available, our burgers are still much lower in fat than typical burgers. In fact, a burger made with 4 ounces of ground chuck instead of ground round, 1 ounce of cheese, and a 1 1/2-ounce hamburger bun weighs in with 473 calories and 28.4 grams of fat (54 percent calories from fat).
