Freezing Tomatoes
You can freeze tomatoes if you're going to use them in a sauce or soup (for other uses, they'll be too mushy). Rinse, cut out the stems and any bad spots, quarter, and toss tomatoes into freezer bags. Then just simmer the frozen tomatoes into a sauce months later to bring back memories of summer.
