1. The rice is sticky, so moisten your hands in a bowl of equal parts water and
rice vinegar before pressing the rice onto the nori.
2. If you prefer rice on the outside (as shown here in making the Bagel Roll),
gently flip nori sheet. Position the sheet slightly past the mat edge closest
to you. Fold the nori edge closest to you over the filling.
3. Pick up bamboo mat edge closest to you and roll rice-covered nori tightly over
the filling.
4. Gently squeeze sushi roll to form a tight, round roll.
