If you're peeling only one tomato, rub the blade of a knife firmly against the
skin until it wrinkles; then core the tomato and, starting at the edge, pull
off the skin. If you're peeling several, follow these simple steps:
1. Core each tomato with a paring knife, removing the stem end and white center.
2. Cut an "X" on the bottom of the tomato, carefully cutting just
through the skin.
3. Fill a Dutch oven with water; bring to a boil. Immerse tomatoes for 20 seconds;
remove with slotted spoon and plunge into ice water.
4. Slip remaining skin off tomato using a paring knife (skin will be very loose).
