Shrimp Soup.
Step 1 - Look for stalks that have thick, firm, heavy bulbs and tightly
bound green leaves. You should smell the characteristic citrus scent when you
press your fingernail into the bulb. Remove the outer woody leaves to expose
the white inner core.
Step 2 - Thinly chop or slice the core.
Step 3 - Crush the slices with the back of a knife to release their
aroma and oils.
