1. Beat sugar and margarine at medium speed of a mixer until well-blended (about 5 minutes).
2. Gradually add egg substitute, beating well.
3. Add one-third of flour mixture to creamed mixture.
4. Add half of sour cream mixture. Add flour mixture and remaining sour cream mixture alternately, ending with flour mixture.
5. Pour batter into a 9- or 10-inch tube pan coated with cooking spray. Sharply tap pan once on counter to remove air bubbles.
