Buttermilk substitution
What can I substitute for buttermilk?

You can substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup. Just stir together and let stand for 5 minutes. 1 and 3/4 teaspoons cream of tartar plus one cup of milk will also work. Or you can buy buttermilk powder. For baking recipes that call for buttermilk, simply substitute 1/4 cup buttermilk powder plus 1 cup water for each cup fresh buttermilk needed. Mix the buttermilk powder in with the dry ingredients and the water with the other moist ingredients. Unopened buttermilk powder will keep in a cool dry place for up to 3 years and once opened, it will keep in the refrigerator for up to 1 year.
