The comfort of an upside-down cake lives on in these healthy, full-flavored recipes. We topped these cakes with apples, pineapple, and even fresh rosemary! And we didn't stop there—we created innovative cake batters by adding ginger, yogurt, and sweet potatoes.

Much of the upside-down cake's popularity is due to its ease of preparation. Basically, it's made by covering the bottom of a cake pan with margarine and sugar topped with fruit.

During the baking process, the sugar, margarine, and fruit juices combine to create a gooey, caramelized glaze.

Making Upside Down Become Right Side Up

·Remove the cake from the pan while it's warm. If it cools in the pan, the sugar-fruit mixture will harden and stick.

·When it's first out of the oven, let the cake cool for 5 minutes. Then run a small spatula around the side to loosen it.

·Put a serving plate on top of cake pan; wearing an oven mitt, firmly hold the cake pan, and invert it onto the plate.

·Remove the pan.

·Upside-down cakes are best served within 2 hours or so after baking. To serve later than that, let the cake cool in the pan; then, just before serving, heat it in a 375° oven for about 4 minutes or until the bottom of the pan is hot. Run a spatula around the sides of the cake to loosen it; then invert.
