Toasting enhances the flavor of hazelnuts, making them smoky and crunchy. After toasting, it's important to remove the bitter brown skin for a better flavor.

1. Spread shelled hazelnuts in a single layer on a baking sheet. Bake at 350° for 15 minutes or until the skins begin to split, turning once.

2. Transfer the toasted hazelnuts to a colander or dish, and rub briskly with a towel to remove the skins.
