How adorable are these spring chocolate bars from Seattle Chocolates? I was excited (and a little sad) to rip open the beautiful wrappers to see if the chocolate inside was just as delightful as the packaging. I'm happy to say it was. We tried the spring trio, Spring Surprise, Fluffy Toffee, and Fresh Mint, and each flavor received glowing reviews from CL staffers. I especially love that the chocolate in the bars is responsibly sourced, using Rainforest Alliance Certified™ cocoa—making them Earth Day-friendly.

What we thought:

Spring SurpriseThis truffle bar combines coconut, roasted almonds, sea salt, and dark chocolate. Reviewers loved the bar's nutty essence and nice crunchy bits. I loved the subtlety of the coconut—not overwhelming, like some coconut-laced bars.

Fresh Mint: Reviewers raved over this bar, praising the ultra-creamy, smooth milk chocolate with a great restraint of mint. Many favorably compared it to Thin Mints.

Fluffy Toffee: Seattle Chocolates describes this bar as a grown-up version of the marshmallow egg, and we can see why. The bar truly has fluffy, marshmallow-y texture with a good ratio of toffee to milk chocolate. A sprinkling of coarse salt makes this bar memorable.

Best of all, each of these bars retails for only $3.50 apiece! Break into one of these bars to celebrate Earth Day, or give as a trio as a sweet gift to your favorite mom on Mother's Day.
