Here's one of our latest obsessions in the Test Kitchen—smoky, rich Korean red pepper powder. Don't be scared! While Korean food is known for being super-spicy, this ingredient actually is not. It's earthy, slightly bitter, complex, and just mildly spiced. We've gone nuts for it, adding it to all kinds of dishes. We've stirred it into soups, added it to salad dressings, mixed it with cream cheese for a bagel/sandwich spread, and more. Here, let me tell you all about it in this video.
