This Chipotle Pork Roast was inspired by our original Chipotle Pork, one of our top test kitchen rated recipes (and a reader favorite!). But you see, it’s more of a weekend dish, as the meat gets marinated, pan seared, and then slow roasted in the oven for a couple of hours. Trust me – the results are well worth the effort… it’s just a wee bit time consuming for Supermom (or dad) at the end of a long day. Fine on a lazy Saturday, but what if you want to rock this roast on a Tuesday? Problem solved. We’ve done the cooking for you here at Cooking Light – all you’ve got to do is pop it in the oven and let it heat up while you prep the rest of your dinner (or do the laundry, wash the dog, mop the floor, and water the garden). Scents of chipotle, lime and garlic will fill the kitchen as this roast warms in the oven – as if indeed it was made from start to finish in your own home! The end result is a tender, juicy, fall-off-the-bone pork shoulder and a smoky sauce that’s crazy good and packed with flavor. It’s just perfect by itself, served alongside roasted vegetables, but works deliciously when tucked inside sandwiches and tacos, or spooned over fluffy baked potatoes.
