Five on Friday: Start Celebrating Cinco de Mayo

Each Friday, we share five things that are getting buzz around the Cooking Light offices—from what we’re reading around the Web, to what’s hot on Instagram, or even our latest favorite ingredient.

In honor of Cinco de Viernes, we're starting Cinco de Mayo a couple days early with five top Mexican-inspired recipes to get you celebrating.

1. Start with what's most important, the margarita. Did you know? A regular happy hour frozen margarita is around 12 ounces and weighs in at 410 calories—56% coming from sugar! I'm a classic, on-the-rocks girl all the way and the Cooking Light Margarita comes in at just 130 calories for a 6-ounce portion with just 14% coming from sugar. Here's how to make it: 1 ounce premium or silver tequila, 1/2 ounce Cointreau or other orange-flavored liqueur, 1.5 ounces fresh-squeezed lime juice. Shake with 3/4 cup ice; garnish with lime. Perfection. Find 6 more margarita recipes.

2. Guacamole with Fish Sauce: Don't knock it 'til you try it. One teaspoon of fish sauce lends the perfect amount of umami-goodness to ripe avocados.

3. Fish Tacos: A light batter gives the fish a crispy crunch, topped off perfectly by the mango salsa. View Recipe: Baja Fish Tacos with Mango Salsa

4. Party-perfect side: This Latin-accented three-bean and corn salad is studded with guacamole components: jalapeño, cilantro, white onion, lime, and avocado.

5. Sweet and spicy: Bittersweet chocolate mellows the ground peppers' heat in these Mexican Chocolate Cookies. My family approves; my mom requests these cookies each year for her birthday.
